“Little Sardines.” The canning industry in Spain began around 1880, primarily in the Galician estuaries, where sardines were the most prized fish of the time. Before the arrival of factories, sardines were preserved by salting in small workshops.

However, when the sardine stocks disappeared from the French coast, French canners realized that Galicia had abundant sardines and women skilled in their processing. This led to the creation of joint ventures and the construction of more technologically advanced factories for the production of canned fish.

This collaboration between Spain and France was short-lived, as at the beginning of the 20th century, Galicia began to stand out in the production of canned fish, while the Cantabrian coast specialized in albacore tuna and bonito. The arrival of Italian salters also influenced this region, creating an important center for the production of semi-preserved anchovies.

Canned sardines are a highly healthy food. Nutritious and inexpensive, it is small and elongated. Its back is blue-green, and its belly and flanks are silvery. It is found in the Mediterranean Sea, the Cantabrian Sea, the English Channel, and the North Sea. It is a very common species along the entire Spanish coast.
